I have fallen in love with Bim’s Kitchen African Baobab & Peanut Butter. It contains only natural ingredients: peanuts, baobab fruit, honey and sunflower oil. That’s it! It’s a crunchy peanut butter, with fresh chunks of peanuts throughout. I already tried it on a toasted bagel (my simple photo on Twitter and Instagram generated more interest than my elaborate dishes!) I thought to myself… I need to think about how to incorporate this amazing baobab peanut butter into a recipe (I’m collaborating with Bim’s Kitchen to develop recipes for their website).
Yes, you can use any crunchy peanut butter but I highly recommend Bim’s Kitchen African Baobab & Peanut Butter. Firstly, it contains 10% baobab fruit, which has a nutty flavour and gives the peanut butter a slight hint of sweetness. Plus, the baobab fruit is an African “superfood” chock full of vitamins, antioxidants and other nutrients.
If that hasn’t convinced you enough, Bim’s Kitchen African Baobab & Peanut Butter doesn’t have the unpleasant clag factor of regular peanut butter. It has a nice fresh taste, one that goes well with ginger so I came up with a peanut-ginger sauce for this recipe.
