On 11 May, 2024 The Baking Jin held a soft launch of his East Meets West: Suffolk Supper Club – afternoon tea-style at his new home near Framlingham in Suffolk. This was a practice run to gauge interest, assess the set up and get feedback.
It’s been almost 6 years since he held his very first supper club in Cambridgeshire (I wrote about it here). He’s a real pro at it now, having done several pop ups in Cambridgeshire over the past years, like The Tasting Table and East Meets West @ Signorelli’s. I think this type of event will do well in Suffolk and I know I will continue to make the trip from Cambridge to enjoy Jin’s cooking and baking at his supper clubs.
The Baking Jin put together another wonderful parade of his (ESEA) East and South East Asian-inspired sweet and savoury delights. For the West to meet the East, Jin included ingredients from Suffolk producers as well as Afternoon Tea staples like earl grey tea and scones. Emmerdale Farm Shop beef, Bungay butter from Fen Farm Dairy, Adnams gin and homegrown walnuts from the garden (can’t get any more local than that) were incorporated into the menu.
We started with Chrysanthemum tea. The courses were divided into chapters – an open book to Jin’s creativity!
CHAPTER 1: SAMBAL (spicy Indonesian chilli paste)
BBQ Satay (chicken skewer) with peanut sauce
Beef Rendang Roll (Malaysian beef dry curry in filo pastry,) made with Emmerdale Farm beef
Acar (spicy pickled vegetables) with peanuts, sesame seeds
Homebaked bread rolls with cardamom
CHAPTER 2: COCONUT
Scone with Gula Melaka Kaya (Malaysian palm sugar coconut jam), Bungay butter from Fen Farm Dairy
Seri Muka Kuih with glutinous (sticky) rice, coconut, pandan – featuring coconut milk at the bottom (salty) and pandan custard at the top (sweet)
Kuih Lapis (steamed layer cake) in rainbow colours (a nod to Eurovision taking place that same day). Fun fact: Lapis means “layer” in Malay and we were encouraged to peel back the layers and eat them one by one.
AMUSE BOUCHE: Jin’s mango lime leaf sorbet was a refreshing palate cleanser.
CHAPTER 3: CHIFFON CAKES
Pandan Chiffon Cake with pandan, chantilly cream, gula melaka syrup, coconut
Rose and Lychee mousse with lychee, rose, Adnams gin
Orange Earl Grey with orange, earl grey tea
CHAPTER 4: HOT AND COLD
Pandan ice cream roll with pandan, gula melaka, coconut
Speciality coffee (expertly made by Aidan) + walnut cookies (from their walnut tree in the garden – we could sometimes hear the walnuts falling on the roof)!
I really missed Jin’s amazing bakes but I’m happy that he relocated to Suffolk as he has a much better set up there for continuing his business. He does take Cambridge orders so be sure to check his T&Cs and next delivery dates. Jin does party orders, chiffon cakes, swiss rolls, kuih, Hokkaido cupcakes and more!
